Honey Sesame Tempeh and Spicy quinoa Salad

In all honesty, Monday was one of those days where I just didn’t feel like cooking (GASP). I just wanted to quickly make something rather than ordering Dominos (which I knew I was going to regret eventually If I ate the whole pizza to myself) .Nevertheless, I remembered that I bought tempeh specifically for this recipe and thought to myself. “Well, why not give it a try” and thank goodness I did.

Personally, I think the way how food is presented can be an important indicator in regards to how food is perceived and accepted, especially in children. However, there are some foods no matter how you present mashed lentils it would look hideous, but would still taste great nonetheless.

This recipe was adapted from the website Eating Well. In this recipe, I tried adding zucchini and red capsicum which turned out great as it appealing colours to the dish.

The texture of tempeh is similar to meat, so this dish could be a great alternative if you are looking for a vegetarian meal. While my brother does not like tofu or soybeans at ALL!!  he thought the tempeh was pork before eating and  finished the salad with no complaints!!!! (even though he knew it was tempeh).

Last but not least, red Capsicum and Chilli. It looked too good to be mixed. However, another great part of this salad was mixing all of the flavours together. 🙂 Something tells me that this will be definitely be made again this week :).

Ten Tips to stay mentally healthy | Tip #1 – Take the time to enjoy :Walking and enviroment

Achieving a stable and enjoyable mental health is a vital state of ensuring our health and well-being. It’s crucial in regards to how we function from day-to-day and how we approach challenges when the time come.  Just like physical exercise, there are ways you can improve your mental health.

Today’s firsts tip from the better health channel Ten Tips to stay mentally healthy is to take time to enjoy.

Morning grass

Some of the ways how I love to take the time to enjoy myself is going for walks and on Thursday, I went to a small farm.  For me personally, when I go to a farm, it  really calms and refreshes my mind. Seeing vegetation, the morning dew, the sweet smell of fresh herbs in the garden and the sound of chooks running happily running pecking for food was quite therapeutic ~ahhh.

Like a child, I was excited to go inside the vegetable patches and get a closer look of the fabulous vegetables that were growing in season. There’s just something about growing your own fresh vegetables that makes the taste unique. I love gardening because not only do you grow your fresh vegetables, it also involves social interaction with  family or friends and it also counts as some form of exercise. It ‘s also fun to get kids involved.

I’ve noticed that a lot of cultures from different nationalities do have their own veggie patch to cook their own traditional meals which I think is lovely when making lunch or dinner for the whole family.

and the new fern leaves frondescent into new green leaves really makes me appreciate how privileged we are to live in such a wonderful environment. I feel very strongly that we should do everything we can to prevent environmental pollution such as throwing your litter in the bin. Sometimes I’m appalled how some people just literally throw their litter on the ground when there is a litter box just one meter away from their, or when do not recycle. I believe everyone’s action in making a better environment can help make a difference in promoting an environment that is clean and sustainable for everyone.

Love

Walking to a small farm and to a lovely environment made me feel better and was a great way for me to unwind the million of thoughts running through my heads. Peace and solitude in the form of walking is one of the ways how I like to enjoy the small , simple but very precious moments in life.

Minestrone Soup!

What woke me up at 6:00am on a Sunday morning was the sound of the rain drops falling on our tinned roof, producing that exact frequency and precise pitch, which was comforting and soothing to my ears drums. I glanced across my window watching the dark grey clouds dominate the sky,while wrapped in a warm cosy blanket, which made me even more drowsy.

“Five minutes just, five minutes pleaseeeeee” I repeated to myself before getting out of bed. Funny thing how that five minutes always turns into 1 hour. Well thank goodness it was Sunday.

Every step along the dark hallway was the like stepping on ice, even though I was wearing socks, my feet were so cold that I felt a tingling sensation all around my feet. It was like electrical currents passing through my ankles all the way to the tip of my toes. I was looking for Ugg shoes. I don’t usually wear them, but once I slipped my two feet into these shoes of paradise , there was no turing back. Taking these shoes off was no longer an option.

You know what else is comforting when its cold and raining outside? SOUP!!!!!

Both my friends Ashley and Ashley (yep it’s two people), and I have an obsession for soup. Getting canned soup from the supermarket is convenient and quick when you on the run. However, you absolutely cannot compare the quality of the flavour homemade soup with canned soup. There is something sentimental about making you own soup at home giving it that extra burst of unique flavours, driving the winter blues away, that is whether you eating enjoying soup in solitude or with a group of family and friends. After all, I love watching how each food ingredient is combined to prepare the finial dish.

Bitter cold days/nights definitely calls for liquid nourishment, and this soup recipe is just what the doctor ordered! It is also a great way adding different vegetables in your diet as you will obtain fibre and a whole range of other important nutrients to keep your body healthy.

You can experiment with different vegetables and different seasonings, then you will have a warm homemade soup that literally will give you peace of mind ( which kept my taste buds happy :)).

And how could I forgot the tea. ( My current obsession at the moment is green tea jasmine). Happy Sunday!!!!

This recipe was adapted from the following website. http://www.taste.com.au/recipes/12013/minestrone+soup in this recipie, I used beef strips instead of bacon and the four canned bean mix instead of  kidney beans as well as adding cauliflower and zucchini .The website includes more information on how to freeze, thaw and re-heat the soup. However, being in a family of 7, this soup will most likely be consumed in a matter of minutes.
